Craving a warm, nourishing breakfast that warms you up from the inside out? This Instant Pot Date and Nut Oatmeal is an absolute game-changer for busy mornings, offering a warm and nourishing bowl of goodness to kick-start your day. By combining simple rolled oats with a rich blend of mix-ins, it transforms an everyday staple into a rich, creamy bowl packed with delightful textures.
A delicious mix of cashews, almonds, dates, and red raisins lightly fried in butter elevates the base of tender oats. Toasting the nuts and dried fruits over low heat brings out their natural sweetness and nutty aroma before you fold them into the oats. A tiny pinch of salt perfectly balances the natural richness of the butter and milk, creating a comforting flavor profile in every spoonful.
Making this dish is a streamlined process thanks to the Instant Pot. You pressure-cook the oats with water on High for just four minutes, then perform a quick manual release. Afterwards, stir in the milk and simmer on Sauté mode until you reach your desired consistency, before folding in half of the toasted nuts and dried fruits.
To serve, top this comforting bowl hot or chilled with the remaining fried nuts, a sweet drizzle of honey, and a warming pinch of ground cinnamon.
