This Spicy Garlic Chutney delivers a bold, fiery kick finished with a sizzling mustard oil tadka. Made entirely in a traditional mortar and pestle, this rustic condiment combines fresh garlic, dry red chili, and a dash of bright lemon juice. Coarsely crushing the ingredients releases their natural oils, creating a deeper, more robust flavor profile than using a food processor. This spicy garlic chutney is perfect for adding a fiery, flavorful touch to your favorite meals.
The true highlight of this recipe is the hot tempering, or tadka, which gives the chutney its signature aroma, depth, and irresistible flavor. Smoking hot mustard oil is infused with sliced garlic, earthy urad dal, and popping mustard seeds before being poured directly over the crushed garlic paste. As the hot oil hits the mixture, it instantly toasts the spices and releases their rich, nutty aromas throughout the chutney. It also helps mellow the sharp raw garlic bite while adding a warm, smoky layer of flavor. The combination of crunchy tempered spices, fragrant garlic, and fiery chili makes every spoonful bold and satisfying. Serve this versatile Indian chutney as a punchy side with your favorite flatbreads, rice dishes, grilled foods, curries, or crispy snacks. It also works beautifully as a flavorful accompaniment for simple everyday meals when you want to add an extra kick.
