Ingredients
- 2 tbsp olive oil
- 13 oz 390 g skinless salmon fillet
- Salt to taste
- Black pepper to taste
- 1 oz 30 g shallots, chopped
- 3 garlic cloves chopped
- 1 small red chili sliced
- 5 oz 150 g cocktail tomatoes, quartered
- 3 tbsp lemon juice
- Zest of 1 lemon
- 2 tbsp fresh parsley chopped (plus extra for garnish)
Instructions
- Sear The Salmon
- Heat the olive oil in a large skillet over medium heat.
- Season the salmon with salt and black pepper.
- Cook the salmon for 2 minutes on each side. Remove from the pan and set aside.
Make the Lemon Garlic Sauce
- Add the chopped shallots, garlic, and sliced red chili to the same pan. Cook for 3 minutes.
- Stir in the quartered cocktail tomatoes and cook for another 3 minutes.
- Add the lemon juice and cook for 2 minutes.
