Gluten-Free Chickpea Pasta with Chicken

Ingredients
For marination
- 1 lb chicken breast
- ¼ tsp black pepper
- ½ tsp salt
- 1 tbsp ginger garlic paste
- 1 tbsp olive oil for marinating
- ½ tsp paprika
Pasta
- 1 tbsp olive oil for cooking the chicken
- 2 cups tomato basil marinara sauce
- 8 oz chickpea pasta gluten-free
- 2 cups water
- 4 oz shredded mozzarella cheese
Garnish
- 2 tbsp Parmesan as needed for garnish
- 6 leaves basil leaves as needed for garnish
Instructions
Marinate the Chicken
- Add the chicken breast, black pepper, salt, ginger garlic paste, and olive oil to a bowl.
- Rub the seasonings well into the chicken.
- Marinate for 10 minutes, if preferred.
Sear the Chicken
- Add 1 tbsp olive oil and add the chicken.
- Cook for 3 minutes on each side.
- Add the paprika and cook for 1 minute.
Add the Marinara Sauce and Pasta
- Add the tomato basil marinara sauce, gluten-free chickpea pasta, and water.
- Mix well.
Pressure Cook
- Pressure cook on high for 4 minutes.
- Quick release the pressure.
- Remove the chicken and shred it.
- Add the shredded mozzarella cheese and mix.
- Add the shredded chicken and mix.
Garnish
- Garnish with Parmesan and basil leaves
