This Instant Pot Beef Stew Recipe is made with tender beef, potatoes, carrots, celery, and a rich savory broth. An easy pressure cooker meal that's perfect for weeknight dinners, meal prep, and comforting family meals.
Turn on the Instant Pot, select Saute mode at More. Add oil, garlic, ginger and cook for 2 minutes. Add bay leaves, dried red chilies, star anise, and green onion and fry for 2 more minutes until fragrant.
Add the Beef
Add the beef chunks. Cook for 7–8 minutes.
Add the Spices, Onion, Tomatoes, Sauces, sugar, pepper, and water
Add chili powder and turmeric powder and cook for 2 minutes until beef changes its color.Add onion and tomatoes and cook for 2 more minutes.Add soy sauce, oyster sauce, sugar, pepper, and waterMix well, and level the meat for even cooking.

Pressure cook on High Time: 30 minutes Quick release the pressure
Add Potatoes, Carrots, and Salt
Add the diced potatoes, carrots, and salt,Mix well and level the surface for even cooking.
Pressure Cook 2
Pressure cook on HighTime: 10 minutesRelease the pressure Naturally for 10 minutes then allow to release any remaining pressure manually.
Garnish and Serve
Sprinkle freshly chopped green onion and serve hot with steamed rice, crusty bread, dinner rolls, or mashed potatoes.
Storage:Store leftover beef stew in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.Reheating:Reheat gently on the stovetop with 1/4 cup water,or in the microwave, or add 1/4 cup water and use the Instant Pot's Sauté function.
Notes
Do not skip the natural pressure release. It helps the oil separate and rise to the surface.
