Rustic Hungarian Soup

For the Beans
- 6 cups water
- 1 lb 450g pinto beans, washed and drained 35, min cook 5,5,2,5,2,2
For the Soup
- 2 to 3 tbsp olive oil
- 2 medium red onions chopped
- 2 garlic cloves minced
- 1 medium red bell pepper chopped
- 3 medium carrots diced
- 1 medium red chili minced
- 1 celery stalk sliced
- 1 lb 450g smoked beef sausages, sliced
- 1 tsp paprika
- 1 tsp dried basil
- 1 tsp dried tarragon
- 2 tsp salt
- 1 tsp black pepper
- 2 tbsp chili pepper paste
- 2 medium tomatoes chopped
- 8 cups water
- Fresh parsley chopped for garnish
Add 6 cups of water and pinto beans to a pressure cooker. Cook on high pressure for 35 minutes, then quick release the pressure. Drain the beans and set aside.
In the inner pot of Instant Pot, heat olive oil and add the red onions and garlic. Sauté for 5 minutes.
Add the red bell pepper and carrots. Cook for 5 minutes.
Add the red chili and celery. Cook for 2 minutes.
Add the smoked beef sausages and cook for 5 minutes.
Stir in the paprika, dried basil, dried tarragon, salt, black pepper, and chili pepper paste. Cook for 2 minutes.
Add the chopped tomatoes and cook for 2 minutes.
Pour in 8 cups of water and mix well.
Pressure cook on high for 5 minutes, then quick release the pressure.
Add the cooked and drained beans to the soup and mix well.
Garnish with freshly chopped parsley and serve hot.
You can adjust the chili paste according to your preference.
Smoked beef sausage gives the soup its rich flavor, but other smoked sausage can also be used.
Serve with crusty bread for a complete meal.
