- 15 lb Beef Flank or Round Steak (thinly sliced)
- 1 tsp Salt (to taste)
- 1/2 tsp Black Pepper
- 2 tbsp Olive Oil (for searing)
- 1/2 cup Breadcrumbs (for filling)
- 1/4 cup Parsley (finely chopped)
- 2 cloves Garlic (minced)
- 1/2 cup Beef Broth (for gravy)
- 1/4 cup Heavy Cream
Prepare the Beef: Flatten the beef slices with a meat mallet until they are about 1/4 inch thick. Season both sides with salt and pepper.
Make the Filling: In a small bowl, combine breadcrumbs, parsley, and minced garlic.
Stuff and Roll: Place a spoonful of filling onto each beef slice. Roll tightly and secure with a toothpick.
Sear: Heat olive oil in a large skillet over medium-high heat. Brown the rolls on all sides until golden.
Simmer: Pour in the beef broth. Reduce heat to low, cover, and simmer for 25–30 minutes until meat is tender.
Finish the Sauce: Stir in the heavy cream and let the sauce thicken for 2–3 minutes before serving.
