No Bake, No Cook Cashew and Chia Pudding

A creamy and healthy pudding made with strawberries, cashews, chia seeds, honey, and cream. This refreshing dessert is easy to prepare and perfect for breakfast or a light treat. It can also be made vegan by using dairy-free cream and replacing the honey with maple syrup.

Ingredients
  

  • 7 oz 210 g strawberries
  • 3 oz 90 g cashews
  • 1/2 cup cold water
  • 1/2 cup whipping cream
  • 1 tbsp honey
  • 3 oz 90 g chia seeds
  • Grated coconut for garnish
  • Fresh strawberries for garnish

Instructions
 

Blend the Ingredients

  • Add the strawberries, cashews, cold water, whipping cream, and honey to a blender.
  • Blend for about 2 minutes until smooth.

Strain the Mixture

  • Strain the mixture into a bowl for a smoother texture.

Stir in the Chia Seeds

  • Stir in the chia seeds until well combined.
  • Divide the mixture evenly into 4 serving glasses.

Chill the Pudding

  • Refrigerate for at least 2 hours, or until the pudding has set.

Garnish and Serve

  • Garnish with grated coconut and fresh strawberries before serving.

Notes

Adjust the honey to suit your preferred sweetness.
Store covered in the refrigerator for up to 3 days.
You can use strawberries or any fruit of your choice.
